Paleo Energy Balls

These are sooooo yummy!! I used this recipe but changed it just a bit.  Here’s what I did…

Recipe:

  • 1/3 cup cocoa powder
  • 1.5 cups pitted dates
  • 1/3 cup ground flax seed
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted almonds
  • 1/2 cup sunflower seeds
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries, optional: goji berries, dried cherries
  • 3 tablespoon coconut oil
  • unsweetened shredded coconut

I used my vitamix and killed it! Oopsie!  Well it actually came back to life lol.  But it did overheat.

If you click the link above, you’ll see the original recipe and the directions on how she made it.  She used a food processor and pureed the dates first, then added the coconut oil, cocoa powder, cinnamon, flax seed, and vanilla and then added the rest of the stuff.

Since I messed up and stuck everything in together at the same time (another oopsie)…. mine came out very mushy and sticky and I couldn’t roll them into balls.  I decided to dunk my hands in flower, roll them and then rolled them into coconut flakes.  Still came out yummy!!

After months of saying I’d never crossfit, I finally gave it a shot.  So far, so good! I’m getting stronger and enjoying the process.

I’ve been dying to take some fitness photos for a loooong time so I finally left my comfort zone and went for it.    My friend Liz was great and Coach Eddie was on hand to help choreograph.

Sunrise Maternity Photography | Aventura, FL

I am so absolutely in love with these photos!  I could not have asked for a more beautiful or sweet couple. Just perfect (IMO).

Including the father in your maternity session is a great way to capture the excitement and anticipation of the arrival of your new baby. You can include the father in a variety of poses, such as holding your belly, standing behind you, or even just by your side. To make the most of your maternity session, it’s a good idea to communicate with your photographer about your vision for the shoot and any specific poses or shots you would like to have. Additionally, make sure the father feels comfortable and confident in front of the camera, as this can help create a relaxed and natural feel to the images.

Woke up in the middle of the night and could NOT get back to sleep.  I went downstairs, opened my laptop and was about to start working when I spotted my son’s blue finger light.  This idea popped into my head….  ( Not my idea but have been wanting to try it for some time now )

Baby Nursing Session | Aventura, FL

Mom asked me to shoot a nursing session. Now why didn’t I think to offer this to my clients before???  I certainly wish I had some photos like these with my 3 nursed babies.  Such a treasure!

Butter Beer in my new Vitamix 5200

Just made some butter beer in my new Vitamix.   My son requested and I was happy to put my new toy to work.  It was mucho yummy!

Sunrise Photo Shoot in Aventura, FL

I’m always so thankful for clients who agree to meet me during sunrise and right before sunset.  Nothing beats the beautiful light!

This little cookie was woken up a few hours early and it was soooooo worth it!  So beautiful!

Met this sweet couple just a few days ago when they requested a maternity shoot at One Bal Harbour.  I’m so very happy they introduced me to my new favorite location for beach sessions!  Loved that they brought their one year old English Bulldog Carmela! Poor Carmela is in for a rude awakening haha! In just a few weeks, she will be the baby no more.  Can’t wait to meet their little munchkin!
